It's a white cake, with blue buttercream icing!! I love buttercream icing, I would totally eat it with a spoon . . . not that I have, Not that I am right now . . . nom nom nom.
I also love tall layered cakes, this one happens to be a 4 layer cake. In the words of Montell Jordan . . . "This is how we do it!"
1) Slice the top off of every layer but the top. You want them to be able to stack well.
2) I use the small star icing tip. Although in hindsight I think the Larger star tip would have worked a bit better.
3) I do a bit of a skim coat of icing around the cake, filling in the gaps. Then I start at the top making small swirls of icing.
4) I moved down the cake and ended at the bottom.
5) I filled in the smaller gaps with little dabs of icing. DONE!!!

Have you tried the Bake Easy strips from Wilton? Michaels (or other craftstores) carry them for about $10 (pre-coupon of course!) Youll never have to level off your cakes again! They work great!
