    Getting Ready for Fall: Stocking the Pantry

    So here we are, the last two installments of this years getting ready for fall, small tear :( just kidding.
    I thought I'd share how we stock the pantry for fall. During the fall we get a lot of rain, so BBQ is out of the question.

    We both love homemade soup, so on any given day in the fall and winter you will find multiple boxes of stock in our cupboard.


    A fall favorite of mine is grilled cheese sandwiches with tomato soup and pickles on the side. I've never even looked for a homemade tomato soup recipe because I found this boxed Organic Tomato Soup, made by Pacific. A friend of mine suggested it and we love it. The best part is, Costco sells it in a super pack , for a great price.


    We also have a fantastic fall back for quick dinners. Pasta!!! We take a simple jarred sauce, this one by Simply Natural is very good, once you add your own touches (we add either ground beef or spicy Italian sausage or Lee's favorite Meatballs). We found this sauce at Costco as well as the organic tri color vegetable pasta we serve it on. All very affordable, especially for organic.


    And you can't get through rainy fall days with out HOT CHOCOLATE. This Land o' lakes brand comes in a ton of different flavors, my favorite is vanilla, Lee's favorite is Supreme Chocolate.

    So there's our fall pantry stock up. I can't wait to make my first batch of Potato and Leek soup. YUM

    As a side note: These shopping baskets are super handy, I bought mine from Homesense but you can get them almost anywhere now, Amazon had some cute ones.

      Love homemade soup. We are actually making a batch of homemade chicken noodle soup today. Katie loves grilled cheese, tomato soup, and pickles after a match! She dips her in ketchup though...silly child. I'd love the potato and leek soup recipe. Both she and her dad love potato soup. I will have to look for the products next time we are at Costco.

      this is more of a winter pantry for us down here in Greece. It's still so hot...
      Anyway, I really like to cook from scratch almost everything mainly for 3 reasons:
      1. I know exactly what we eat
      2. Even the most basic tomato sauce for pasta/pizza/soup/stews etc tastes so much more...natural (and good!) than a packaged one
      and
      3. I avoid all this extra packaging that I have to recycle or reuse or throw away at all costs.
      Now, I know that this may not be for everyone but...it may give your readers something to think about.
      Having added my 2 cents, keep up with the excellent posts. They have turned out my favorite reading of the day!

      Lee loves lentils, but I'm not a huge fan, maybe I should try them again! It's been a few years now :)

      I love the idea of making everything from scratch. I wish I could make everything like that, and those are three great reasons to make your own.
      We are trying to strike a balance, homemade soup but we use chicken stock from a box. I would love to start making more from scratch, I would also love summer in Greece :)

      OOH! I am a huge soup person as well. I would LOVE your recipe for potato leek soup. I have been looking for a good recipe, since first having in Florida (at Disney World of all places) We also love the spicy sausage lentil soup from Carrabba's restaurant.       It seems like a lot of ingredients but it is so worth the effort. We have even gotten other friends addicted to it. LOL!

      Is Pumpkin soup popular in Canada like it is in Australia? I would like to share my receipe...it's so easy.
      The yummiest way to make it is as follows.
      Rather than boiling peeled pumpkin pieces in stock, bake them in the oven with some oil, S&P, and chunks of onion.
      When well cooked transfer to large bowl and puree with a mixer whisk adding hot chicken stock as you go until required consistency is achieved (we like it fairly thick).
      A dollop of sour cream on top to serve and enjoy. Baking the vegetables gives a delightful caramalized flavour.

      I've never tried pumpkin soup, I would love to try it!! It sounds super easy, and I love the idea of roasting it. The first pumpkin I see in the store I'm buying and making Pumpkin soup!! Lee is so excited about the recipe selections :) I don't try new recipes all the time, but I'm super inspired to now!
      Is any pumpkin okay to use, or are the bigger ones better or smaller ones tastier??

      Ashli I do tend to buy smaller and organic if at all possible but certainly not necessary. Any type of pumpkin seems to work.
      And woops, I forgot to list an ingredient. I also add some chunks of orange sweet potato.
      I'm afraid I rarely follow set receipes so can't give you exact quantities, I just throw it all together with love :)

      You should try my favourite soup by Avoca ( an Irish favourite). Spiced tomato and kidney bean soup served with a dollop of guacamole. Here's the ingredient list: 1 onion, 1 red pepper, 2 cloves garlic (saute these until soft, about 10-15 min). Add 1/4 teaspoon each of ground coriander, cumin, paprika and mild chilli. Add 1/2 teaspoon of dried oregano. Cook for 2min. Add 400g tinned tomatoes, 1 tbsp tomato puree, 200g tinned kidney beans and 300ml stock. Simmer for 20 min. Liquidise and stir in the juice of 1 lime. Serve with a dollop of guacamole and crusty bread.
      It is the best soup ever! I would love to know what you think if you make it. It's just a great store cupboard dish.
