    Slow Cooker Asian Garlic Chicken

           Since the arrival of Hudson in our lives . . . I have been cooking with either the phone (i.e. takeout) or the slow cooker. :) I think instead of giving traditional baby gifts . . . I am going to start giving new moms a crock pot! (Somehow I don't think that will go over super well ;) haha

           This is a MUST TRY recipe. I only share recipes that we love on the blog and I would never recommend a recipe that we didn't think was amazing, this recipe is in a bit of a league of it's own. It's right up there with Lee's favorite Beef Bourguignon, and my favorite key lime pie.
    But what makes this recipe extra amazing is that it is so fast and so easy, seriously 5 minutes of prep! We like to serve ours over rice, but it would be equally good over noodles, (maybe even better), and for a vegetable I just chopped up some red peppers on the side.

    Asian Garlic Chicken 

          4 boneless skinless chicken breast (or substitute chicken thighs)
          1/2 cup apple cider vinegar
          5 cloves minced fresh garlic
          1  1/2 cups brown sugar
          3 tablespoons soy sauce
          1/2 cup gingerale (you can substitute sprite, 7 up)
          1/2 tsp - 1 tsp red pepper flakes (*optional, adjust to personal tolerance for spice)

          2 tbsp water
          1 tbsp cornstarch

    1) Combine vinegar, garlic, sugar, soy, pepper flakes and gingerale in crock pot. Mix until sugar has dissolved (this doesn't take more than 1 minute).
    2) Now, place chicken into crock pot with liquid.
    3) Turn crock pot to high and cook for 4 hours! (You can also turn the crock pot to low and cook for 8 hours),
    4) When the chicken in ready (after 4 hours on high) pull the chicken out and cut into chunks. Take the liquid from the crock pot and pour it into a small sauce pot on the stove. Bring liquid to a boil. Mix water and cornstarch together and pour into liquid. Heat until the sauce is thickened (feel free to add more cornstarch and water if you would like your sauce thicker).
    5) Eat!
    6) Come back and let us know if you loved it as much as we do!!!

      Sounds yummy! I love my slow cooker - our boys are 10 & 8 and play year round baseball. Without the slow cooker we'd hardly ever be able to eat at home! :-)

      That sounds amazing! I love Asian food but can't eat it out because I'm allergic to soy. I can totally make this with homemade soy free soy sauce.

      we'll definitely have to try! our guy is playing football this year and its been a hard adjustment. with practice from 6-8 we've been eating tons of take out or hot pockets. one can only eat so much of either one of those before being totally over them! thanks!

      Sounds like a great recipe. I love my slow cooker and even cook roast meats in there and they are so tender the meat just tears part. If I wash soft veggies I cook them in ther or you can just put some veggies in the oven. I also cook spag bolognese in the slow cooker which is our favourite recipe.       i would turn the slow cooker to high and add the cornstarch and water and cover for 10 mins to thicken the sauce, minus the chicken. one less pot to wash!

      Honestly, without you there are days my family wouldn't eat. I didn't decide to make this early enough in the day, so I rushed it by doing it in a dutch oven on my stove, still gave it 2 hours to think about itself on a low heat, and it turned out FANTASTIC!

      Add it, along with your sticky pork and a few others to the list of mainstays for our menus!

      Saw this yesterday, checked my fridge and pantry, had all the ingredients, and made it for last night's dinner. I used two boneless skinless breasts and four boneless skinless thighs. Served it with brown rice and edamame. Two teenaged boys loved it, and I loved it because it was easy (and tasted good). Thanks for sharing! (And I love your blog.)

      This recipe sounds amazing. It's something I will have to try. I have been trying to try a new recipe at least once a week. . .more if I can. I was wondering how it was going with a baby in the home now. I now have custody of 2 grandchildren (ages 7 & 3) and it has REALLY changed everything in my household. I had myself on a nice schedule (cleaning, shopping, etc) and it is all out of balance. I am having a hard time getting adjusted to having little ones in the household. I am struggling to find that balance again. . . .

      Fantastic! I already had egg rolls, pot stickers and rice on hand so this was the perfect recipe to try. Let me start by saying my husband is fussy. Though he gets insulted when I say that and claims he just likes good quality food that also tastes good . He loved it and immediately said this was approved to add to our "rotation". Thanks so much!       This has been on our list to prepare since you posted it. We finally made it this past weekend, and it was fabulous! We made it almost exactly per the recipe, except we used 1 1/4 cup brown sugar (as opposed to 1 1/2 cups), and we used 1 1/2 teaspoons red pepper flakes because we like things spicy. This was so delicious. Thanks for giving us another go-to recipe for busy households!

      I think a crock pot is a fabulous idea. 2 weeks befor our grandson was born our daughter made 12 frozen pre crock pot dinners. Now we had them over as much as they would come so it took her a while to eat them all, but it was a fabulous treat to know you had some food at the ready.
      So thank you for this recipe! She and I will both use it!
