    Key Lime Pie aka. HEAVEN


    Key Lime Pie is hands down my favorite desert! I could eat it until I died, at which point you could chop me up and I'd taste just like Key Lime Pie! (wasn't that an appetizing thought?)
    anyway,
    I've tinkered with recipes over the years, always trying to find a yummier, easier recipe. I've found it! It's delicious, and I'm about to gain a ton of weight!



    Crust:
    1 cup finely ground graham cracker crumbs
    2 1/2 tablespoons finely ground graham cracker crumbs
    1/3 cup sugar
    5 tablespoons unsalted butter, melted

    Filling:
    3 large egg yolks
    1 1/2 teaspoons finely grated lime zest
    2/3 cup fresh Key lime juice , (about 23 Key limes total)
    1 cup sweetened condensed milk, (14 ounces)
    2 Key limes, thinly sliced into half-moons

    Make crust: Preheat oven to 350 degrees. Stir together graham cracker crumbs, sugar, and butter in a small bowl. Press evenly onto bottom of an tart dish. Bake until dry and golden brown, about 10 minutes. Let cool on a wire rack.(Leave oven on.)

    Make filling: Put egg yolks and lime zest in the bowl of an electric mixer fitted with the whisk attachment. Mix on high speed until very thick, about 5 minutes. Reduce speed to medium. Add condensed milk in a slow, steady stream, mixing constantly. Raise speed to high; mix until thick, about 3 minutes. Reduce speed to low. Add lime juice; mix until just combined.
    Spread filling evenly over crust using a spatula. Bake, rotating dish halfway through, until filling is just set, about 10 minutes. Let cool completely on a wire rack. Refrigerate at least 4 hours or overnight, or just dive in with a fork, I have tried all three ways, it's always good haha~

    We serve it with a dollop of whipped cream, and a little key lime garnish! It's soooo good! And relatively inexpensive, just a $2 bag of key limes, a Graham cracker crust, (homemade or store bought with way is good) I recently saw them on sale for $1.50 at walmart, a can of sweetened condensed milk $3 and some eggs . . .  Not to bad at all!!

    Try it, in my opinion it's the best summer dessert  . . .or breakfast . . . whatever!

      I love it too! Its very similar to my favorite which involves a lot of eagle brand milk~lemon ice box pie!!

      Ok...you HAD to do it didn't you...now I am craving Key Lime Pie! LOL It is a huge fav around here. Something about the tart and sweet together...yum!
